Picada Colombiana (Serves 8)
Ingredients
- 2 lbs. pork ribs
- 1 lb. Colombian papas criollas or small yellow potatoes
- 8 small red potatoes
- 6 tablespoons oil
- 4 chorizos
- 2 green plantains
- 2 yuccas
- 1 avocado
- Drops of lime
- Salt to taste
Instructions
- Cut the chorizo into small pieces and place on a grill or saucepan. Place the ribs in the same place. Remove the meat from the heat once they’ve browned.
- Peel the yucca and cut into quarters. Pour into boiling water with salt and let cook until they’re very soft.
- Wash the potatoes and cook them in water with salt until they are tender. Cut the potatoes into quarters.
- To make the Patacones: Peel the plantains, cut them into 4 parts and fry in hot oil. Turn them over and when they take on a little color remove them from the heat and flatten them by simply pressing down using a cutting board. Place them back in the oil and remove them when they look well toasted. Dry the patacones over paper towels and add salt to taste.
- Brown the yucca in the same oil as the plantains.
- Place the cooked ingredients on a tray and add more salt if necessary.
- Cut the tomatoes in quarters and distribute in the tray.
- Add the rib and sausage to the picada.
- Prepare the guacamole to your taste.
Serve immediately.
